Whats so special about Cold Continuous Extraction?

We are pretty proud of our little 2 phase Pieralisi extractor. We can only process half a tonne per hour, meaning that its a slow and cold extraction, maintaining maximum nutrients and flavours. This process of extraction is done by centrifugation which by nature means it is a rapid, enclosed process that protects the oil  from oxidation. This means the oil you receive in our bottles still has the naturally occurring antioxidant still in tact, and able to be absorbed into you and your families bodies. We also pride ourselves on ensuring our olives are extracted within 24 hours of harvest, keeping the EVOO as fresh and healthy as possible.

 

I grow my own olives, can you process them for me?

Sure! Our extractor is going nearly 24/7 during the harvest, so please get in contact as soon as possible when you know your olives are ready so you can book in a time to get them processed. We are happy to help make your own amazing EVOO!
