Dukkah Dip

“A truly delicious taste of North African & Middle Eastern Dukkah with Rio Vista Olives Merchant Spiced Olive Oil! The fragrance, the flavor, you’ll want to eat by the spoon and alongside many dishes”  - Huda

Ingredients:

2 tsp cumin
2 tsp coriander seeds
2 Tblsp roasted hazelnuts
2 Tblsp sunflower seeds
1 Tblsp sesame seeds
¾ tsp chili flakes
5 Tblsp Rio Vista Olives Merchant Spiced Olive Oil
2 tsp dried mint
3 Tblsp lemon
2 tsp maple syrup
Crack of black pepper and salt flakes to taste

Method:

In a small heavy-based pan, dry roast the cumin and coriander seeds until aroma starts to come out; then remove from pan and tip into a plate and leave aside
Add sunflower and sesame seeds to the pan and dry roast until nutty aroma starts to come out; then add them to the plate of spices
Add roasted hazelnuts to the spice and nuts
Pour all mixture to a mortar and pestle and pound to a coarse paste
Add chili flakes and dried mint to the mixture then fold in olive oil and mix well
Beat in the lemon juice and maple syrup and season with salt and pepper to taste
Tip the dip into a serving bowl and enjoy with sourdough bread or your favorite bread, crackers, or vegetable sticks, and enjoy!
